Tortas Ahogadas

While waiting for the wife here at the doctors office.  I just remembered how much I miss the tortas ahogadas. It's a carnita AKA pulled porked sandwich dipped in a tomato sauce with raw onions marinated in lime juice on top with a spicy Chile De Arbol sauce.  

My mom made a lot of traditional Mexican food but somehow I was mostly into typical American food.  But as I got older and started in my 20s drinking and hanging out late with friends. Sunday morning was spent mostly at my house. As my parents always had Carnitas on Sundays. Bread , tortillas and chilaquiles. Those days I pigged out myself because of a slight hangover from the night before but the Tortas Ahogadas always stuck out the most. Sandwich dipped, topped with onions and the hot sauce.   Just typing this makes my mouth water. Many states have their own version or try to imitate the ones from Jalisco.  Some are pretty good but some are not. 


So when in Jalisco or if you see that they make these tortas. I strongly recommend them especially after a night of drinks and tequila shots. Common cure for a hangover.
